Guajillo (meaning 'little gourd') is one of the hotter, large podded chillies and is extremely common in northern and central Mexico. The thin walled translucent pods are approximately 10cm (4in) long by 2½cm (1in) wide and are russet red in colour when mature and turns black when dried.. They have an erect habit. Has a mild flavor along the lines of the Jalapeño and are used primarily in salsas and sauces. Seeds detatch from the placenta and rattle around inside the chilli when dried.[1]
